We love these turkey meatballs in the summer time, and they aren’t full of fat! Here is my simple and easy turkey meatball recipe!

Prep that turkey:

Pre heat the oven to 425 degrees.

Line large baking sheet with parchment paper, lightly coated with spray.

Add 1/2 a cup of bread crumbs plus 1/2 cup of unsweetened almond milk or skim milk in a bowl and let it sit for 10 minutes or so. This will be added in after the turkey mixture is made.

Mix that turkey:

1 pound raw ground turkey  (93%) lean

1/4  cup parsley

1 tsp of dried oregano leaves

1/2 tsp sea salt

1/2 tsp pepper ( I just use a pinch)

Optional 2 tablespoons of grated parmesan cheese and finely chopped and cooked medium onion. ( I leave this out to lower fat content)

I add in the bread crumb mixture and form the mixture into small balls. It makes up about 20 balls total.

Cook that turkey:

I place balls on parchment paper and cook for 14-18 or until golden brown and internal temperature is 165 or higher.

These mix well with spaghetti squash or zucchini noodles and It makes a healthy spaghetti and meatballs dish!
